How much gravity will pawpaws add?

Got an email from a guy that I think would know what he's talking about... He says to be safe, assume that the pawpaws will add the same amount of fermentables per pound as grain because more or less, they do. I'm pumped because that means my final ABV will be up around 7%. It's like adding to...

How much gravity will pawpaws add?

Every year in August I go to this huge music festival in the mountains in Southern West Virginia. I also usually brew up something special to share with friends I meet there. Seeing as how pawpaws are known as the West Virginia banana, and seeing as how a wheat beer would be refreshing on a...

Did I just make a batch of bottle bombs?

Ok, good deal guys. I just had this fear in my mind that the yeast wasn't really done or have gone dormant in the cold bedroom and would continue to ferment once they got warm in the carbing process. Thanks! It's been almost 2 months since I brewed it so I would think it would be done by now.

Did I just make a batch of bottle bombs?

So I brewed a Christmas Ale on Oct. 15th using: 10lbs 2-row (may have substituted some 6-row in there, not sure now) 1lbs cara-red 1lbs Special B .5lbs honey malt .5lbs black roasted barley about 10oz of molasses I pitched the Safebrew t-58 high gravity yeast and it took off pretty...

    Weird fermentation...

Ahh... I was hoping you'd say that. In the wild beer I have going I used wild yeast from pear skins and it had a similar smell, or rather feeling in my nose. Being paranoid, I didn't use any of the same equipment for this beer even though I bleached it. That beer is aging in the cellar until...

    Weird fermentation...

I brewed a Christmas ale last night, with molasses and spices and such added during the boil, then I cooled it, put it in my bucket and pitched the yeast. Within 4 hours I had a few bubbles in the airlock. I get up this morning and it's bubbling like crazy... so far so good right? Except, the...

Walk on the wildside - my wild yeast experiments

I forgot there is a wild yeast/lambic forum now, my bad! Mods, can you move this for me?

Walk on the wildside - my wild yeast experiments

I recently read Michael Jackson's Beer Companion and found myself fascinated with the descriptions of some of the Belgium brews and of porters fermented with bret. So... logically I began working with wild yeast(s). As of yet I have not finished a beer using wild yeast, but I have one underway...

    Ambient/Spontaneous Fermentation

Bummer... I was hoping for the verdict, just like everyone else I guess. I started a "wild" starter today. Lacking and orchard or a vineyard, I mashed wild blackberries from the yard in sugar water with some nutrient. I'll be pitching the cake. We'll see...

    Spent Grain...Deer Bait??

+1 I dump spent grains behind a stump in the backyard on the edge of the woods. Nothing seems to eat it. Granted it's next to my fire pit but still.... I see deer in the yard from time to time. I wish it worked, I'm an avid hunter and most of the meat I eat is venison. For the record, hunting...

    Black walnuts

Hmm... maybe if I could get some JD chips and then soak the nuts in more Jack, I might be onto something.

    Black walnuts

This crossed my mind. I originally thought of steeping the crushed nuts in vodka, but then I thought bourbon might be more interesting. Maybe like one of those bourbon barrel beers the local brew pub has on tap. I think the LHBS even sells oak chips. Interesting.... might just be too much...

    Problem with my fryer's burner

All right, good to know! I'll have to swing by Lowes when I make it to town this week for a grill top. My location should be listed, weird... I'm in southern Ohio, bummer.... I could always use a friend with dangerous tools!

    Problem with my fryer's burner

You got it Stile. According to the box, this burner it 110,000 BTU's. Nosmatt, If I had the tools, I'd cut it off, flip it upside down (it's my opinion that the ring adds strength so I wouldn't want to lose it completely) and weld it back. Unfortunately, I don't have the tools and don't know...

    Problem with my fryer's burner

Well this was my first thought too... but I was worried because that would put the bottom of my pot about 2" above where it's supposed to sit. I was worried this would make it take forever to boil because of the distance from the flame, and also use too much gas since I'd have to have it...

    Black walnuts

Anyone familiar with black walnuts? If you've spent much time in the Appalachian mountains you may have come across them. Compared to English walnuts they're more earthy, dark and sort a musky tasting, pretty strong too. I've got some and I was going to use 'em to make bread or brownies but...

    Problem with my fryer's burner

No, it doesn't. The ring and the pot are actually the same exact diameter. I forgot to mention that... the pot also curves in a little on the bottom and will get stick in the ring. The ring is slightly out of round so the pot will wobble on it, which could be very dangerous when full of 7 or so...

    Problem with my fryer's burner

I bought a turkey fryer off Craigslist this weekend. I want to use it for frying turkeys, chickens, boiling sweet corn, etc but I also want to use the burner for brewing. Obviously I'm going to use the pot that came with it for cooking. My brew pot is a really nice 9.5 gallon stainless steel...

what makes a stout milky and smooth?

So how much sugar should I use to carb my oatmeal stout? I want that creamy mouth feel, that's why I went with the oatmeal. Any ideas?

    Anybody making anything on Thanksgiving?

I brewed up a wonderful smelling batch of chocolate oatmeal stout. Things went pretty dang smoothly too. I think I just might be getting the handle on this all-grain stuff. As a bonus, I had a buddy over who just started homebrewing and I walked him through the AG process.
