Imperial Yeast, Newish kid on the block

Im using A15 Independence, Violent fermentation ! 48 hours after pitching, the krausen filled the remaining space in the 8 gallon conical. I will have to reevaluate my system with the next strain I try.

Imperial Yeast, Newish kid on the block

Given the prices of dry or liquid yeasts in this area, it's not price prohibitive.

Imperial Yeast, Newish kid on the block

24 hours in, and it's a very active fermentation. Let's see what the final gravity is.. but the ease and convenience of this product has me almost sold on it

Imperial Yeast, Newish kid on the block

I would normally do a starter, but the LHBS/Brewery said to pitch it as it it. I've got some dry yeast if there is no movement in 3 days

Sparkling Peach White Wine, Great Recipe

Sparkling Peach White Wine, Great Recipe

1.125 is attainable, but I would try to stay away from Dextrose or table sugar. EC-1118,IMHO, is not the right yeast. it will dry it out and could take away quite a bit of the flavor. Try Agave Nectar for your sweetness, and RC-212 for your yeast. As for wanting it bubbly if you have a keg...
