    Home water testing (alkalinity)

Is there an accurate way to titrate a sample of my house water with an acid to a certain endpoint using a pH meter in order to calculate alkalinity? My Ward Labs reports have varied from 33-54ppm. I'm trying to minimize the amount of acid used in the sparge water so measuring the alkalinity at...

    Test Mash Volumes

When doing a test mash, is it more important to get the water to grist ratio correct or the overall water amount correct including volume under the false bottom for the regular system which is a HERMS? I'm doing a test mash with 3.5% of the grain, water and gypsum. The volume under the false...

    Cell Counting and viability testing

In the Yeast book, it says to use a .5% solution of sulfuric acid to combat flocculation when looking at a sample under a microscope. I'm typically looking at how a starter is doing on the stir plate after 24 hours so my dilution is usually around 5:1. Some strains will still clump so I'm...

    Weyermann to add QR codes

This is freaking awesome My Weyermann contact says it starts with bags processed on 11/11/12 and later which is lot code N324 and newer.

    Yeast Propagation and vessel size

I've been doing cell counts for all my starters this year and have come across what I think is an important observation for those that don't have the equipment to count cells. When I make stir plate starters in a 2L flask, I get the growth that the MrMalty pitching rate calculator predicts...

    Barrel Maintenance

Are there any books out there that explain how to take care of oak barrels? Whether they've been previously used for wine or spirits and going to be used for funky or non-funky beers? I searched amazon but didn't find anything.

    Hop maintenance

I originally planted 5 different rhizomes in the spring of '09. Cascade, Centennial, Chinook, Hallertau & Willamette. They were planted in a row in that order, about 4 ft from each other. The Hallertau and Willamette never produced a significant amount of cones. The other 3 produce a crap...

    brown punted Champagne bottles

Does anyone have a supplier for brown punted 750 mL Champagne bottles that can take a cork and crown? I'm looking for the ones that The Bruery and Alesmith use. I've found flat bottom ones put not punted like they have. I contacted them and they order pallets from Germany...I'm only looking...

Amount of Brett needed with Pedio to eliminate diacetyl?

I have 11 gallons of an all Brett Pale Ale I split between my own blend of Brett B, C and L and the other had ECY04. They have both fermented almost completely so I transferred to aging vessels and added a blend of Pedio and Lacto. My Brett blend is now at 3 Million cells per mL and the ECY04...

    Carbonation for a Saison

How many volumes of CO2 does Saison Dupont Vieille Provision have? I'd like my bottled Saison to come out with similar carbonation.

    Green 375 mL champagne bottles?

Looking for green 375 mL champagne bottles with a punt. Same as what Saison Dupont, Drie Fonteinen, Hof Ten Dormaal, etc uses. Anyone know of a supplier that sells a few cases at a time? Thanks! Nate

    Kolbach Index

Does the Kolbach Index of the base grain effect the mouthfeel of the finished beer? I'm trying to diagnose a thinness and I noticed that the base grain has fluctuated from 40ish up to 45ish.

    Finished beer pH

The perfectionist in me has caused an interest in the finished beer's pH. I've read low 4's to 4.5 is normal. Well, I drew samples of 4 beers I have on tap and tested them: Pale Ale - 4.46 IPA - 4.58 Oktoberfest - 4.56 Barleywine - 4.62 They all seem to be on the higher end of what's...

    Top Cropping WLP002

So I brewed the CYBI Mission Street Pale Ale this past Sunday and planned to pitch top cropped yeast from it into the Union Jack recipe. This is what I harvested last night...almost nothing (click it): There is a slight dusting of yeast after sitting in the fridge overnight. What a waste of...

    Caustic/Sodium Hydroxide

I picked up some Sodium Hydroxide to get beerstone off kegs and can't seem to find a concentration to use. I e-mailed the distributor but they didn't know since they sell it for pretzel making. This is the stuff I tried googling it but haven't found an answer. Any ideas? Nate

    Sour Blonde mash pH question

I'm going to take a shot at brewing a Sour Blonde. The grain bill I'm using has 13% Acidulated Malt, 12% Flaked Corn and Belgian Pilsner for the rest. Should I add most of the Acidulated Malt at the end of the mash so that the Corn and Pilsner can convert at an appropriate pH at the beginning...

Compost pile, hops and dog poop

I built a compost pile 2 years ago mainly for grass clippings, spent grain and spent hops. I used some of the compost for the first time this year on my 2nd year hop plants and they are growing very fast. 20+ feet tall and some flowers are showing already. I've read that dog poop shouldn't...

    Heating element in grant?

Currently, I inject steam into the mash if the temp falls and to do steps. I use a 10 quart grant to recirculate at the end of the mash to clear. Can I stick a heating element (running off 120V service) in the grant and use it like a RIMS? Or is 10 quarts of liquid too much for a 120V element...
