    Oak infection?

FG predicted about 1018, I've been running around 1022 but interestingly despite the apparent slow activity in the airlock, it's stayed around 1022 over the past week. And don't call me Shirley. Nothing to do but wait it out I guess and watch the gravity...not as fun as drinking this.

    Oak infection?

So the mass confusion on this brew continues. It's now about a month old and has been through primary, secondary, marinated with Makers and oak cubes and off the oak and back in a "second secondary". This batch continues to produce CO2 with some every 30 or 40 second airlock bubles. The pic...

    Habanero brew suggestions

I'm going to spice up a chocolate stout extract/steeping grains recipe with habanero. Going for some flavor, some heat in the background behind the chocolate without overdoing the spice. I was thinking I would slice and roast, possibly a vodka soak, put some in the last 15min of the boil and...

    Oak infection?

Just racked this to a tertiary. It still looked pretty much like the photo at the beginning of this post. Slow bubbling in the airlock. About 9 days on the oak and bourbon so wanted to get it off those. Took a taste and not only not sour but pretty tasty. Full bodied, good oakiness in the...

    Oak infection?

Will see what develops over the next week. Under the gun a little as I'd like to get it off the oak in the next few days on the off chance that it's not infected.

    Oak infection?

Hey all. Brewed a porter with plans for bourbon soaked oak cubes in the secondary. Soaked the cubes in Makers for about 72 hrs prior to dumping into the secondary with a good amount of the bourbon (about 10 ounces). It appeared to me that the fermentation restarted slowly with this move, had...

    Kabloom- blew off the airlock

Will do thanks. Unfortunately my wife went into imediate clean up mode so all I have left is some roof tile staining. Thanks again!

    Kabloom- blew off the airlock

Soooo...Brewed a robust porter yesterday. Everything went smoothly. Pitched at 78. Rocking fermentation within 2 hours. Looked like it was really rocking 8 hrs later when I went to bed with pride...thought about a blow off tube but then thought..nah, it should be OK. Woke up this AM to...

    ? stuck fermentation

Brewed an extract porter. Windsor dry yeast pitched a little warm around low to mid 80s. Vigorous fermentation for about 18 hrs then very little. Checked gravity and it had actually done pretty well in that short a time but I was concerned I may have pitched too hot and was stuck. Added...
