    That is actually the website/calculator I did use. So I was pretty surprised when we didn't net the expected results. Carbing wise, we used the color chart from the same site, for the style...lately a lot of hefe's and wits...have one milk stout. Anyhow, like I said, we were using the chart...

    3/16 tubing. Pressure...we've tried varying it. Unfortunately with little to no success. Started around 12 PSI and lowered it gradually trying to improve things...but it never really did.

    I'd echo Tasunka. When we were measuring out the orange peel and coriander, my wife and I were pretty skeptical that it would be enough for a 5 gal batch. But...we agreed to just go with the recipe. We put the coriander in the boil for the last 10 min. Orange the last 5. So glad we stuck with it...

    Made this using the ratios Wayne1 gave...and I have to say...it turned out BETTER than any Blue Moon I've ever had. Wife and I are already talking about remaking it and changing nothing. Very balanced...neither the corriander or orange stands out over the other. We really like it.

    Appreciate all the pointers. I make a point to aerate the wort well prior to yeast pitch. Sounds like my starter was insufficient. Next batch...I'll correct that. Hopefully that solves the problem.

    I use the swamp cooler. I keep frozen water bottles in the freezer...toss them in the tub as needed. If you caught the temp at 72...I wouldn't worry too much. The slowing you noticed might not have had as much to do with lowering it 4 degrees as the fact it was just at a point it was already...

    I've been in there a number of times...and they've never mentioned anything to me either. Not only that...the way I read the 2010 law...you can't brew higher than 3.2 ABW...and every kit I've gotten from them exceeds that.

    Newbie confused what to do next

    If you're really worried about temps...you can buy a tub relatively cheap (got mine at Walmart for $7)...put some water in it and drop in your bucket. Throw a wet t-shirt over it. From there...I control temps using frozen water bottles.
