    I've been drinking beer now for nearly two years, almost daily. I brew much of it. Some wine here and there... Why the fwock am I NOT an alcoholic yet? How will I know when I've arrived? Should I drink twice as much or just drink both nightly AND before work? WTF?

    Shiner Bock is one of my fav's. FWIW, the idea that a beer (or anything) "doesn't taste good" or that it "tastes good" is purely subjective. Neither is more correct, or less but rather is simply an opinion. No argument intended, just say'n. Oh, back to the thread's topic with an apology...

    Usually run two+ months between brews, longest "dry" spell maybe 4 months. As to "why", well, life's priorities can run beyond hobbies I 'spose.

    A change of .25 oz here, five minutes later or two minutes sooner, .5 oz there... Most ANYTHING remotely close to the original hops schedule or even a bit different will not be noticed by most peeps. Although on paper, er, on screen, it looks quite bitter indeed.     I'm no chemist and I did not stay at a Holiday Inn Express recently, but is it possible that since the chalk was not dissolved into the water (unless OP used CO2 to do that and didn't disclose) and the large acid addition likely did dissolve, that the resulting pH was in fact very acidic...

    5.25 gallons amberish red (or reddish amber) malt-fest with only enough hop bitterness to offset any (hopeful) caramel sweetness.
