I currently have a ale in the primary (plastic bucket) and want to get a hydo reading to see how fermentation is progressing. What is the best way to do this? I hate the idea of opening it up and exposing it to anything.

Was in MI this weekend and scored a bunch of Stone (Pale Ale,IPA,Ruination, and The Bastard) they do not distribute in Chicago. Already started on the Pale Ale and IPA, will wait a few days on the others.
How long until my beer will carbonate? I bottled my IPA on the 1st and opened one yesterday to sample, and while the taste was ok the level of carbonation was almost zero. The botte did have a small amount of sediment at the bottom.
I know the rule of thumb is 2 weeks...but I wanted to taste...
