Have you opened and cleaned the inside of your kettle ball valve? A few years ago I was getting a weird off flavor and the gunked up residue in the ball valve was the cause.
I don't think these packages are meant to be opened and decanted from. According to Fermentis, once the package is opened, it should be used within 7 days.

You are fine. I've fermented kombucha for over 20 days and it turned out good. It just becomes more tart as it is eating more of the sugar. Your PH readings show that it was fermented. Taste it. You do not need to through out the 2 scobys, they look healthy to in the pictures..
I boil mine for 10 mins the morning or day before I brew. I clean it after every brew by running and soaking in PBW. Even after thorough cleaning and back flushing, hops still come out after boiling the chiller. Never had an infection or plugged chiller.

At flame out a take a large spoon and stir the heck out of the wort until it whirlpools. I put the lid back on and let it sit for 5 -10 mins before draining. I use a plate chiller so it's easy to stir the wort and then close the lid. I get a pretty good trub cone in the middle of the kettle.

I like the speidel as well. I have the 60l and it's very easy to clean. I use a little bit of pbw and a microfibre cloth to clean the inside. I brew 11gallon batches I have yet to see the krausen make it to the lid (tons of head space).

I have a black single tap tower that I now longer need since I upgraded my kegerator to a double tap.
