    !!stolen fermenters!!

1933 Brewery in Fort Collins is opening in a few months (just a couple blocks from my house huray) Unfortunately some jerks managed to steal 4, 1000lb, 5 barrel box fermenters from them 2 nights ago. There are some surveylence photos if you search the story, figured I'd share... Not cool!

    Infection Risk?

Just wait till you had to cool your wort down to pitching temp ;-) you'll be leaving your whole batch exposed for 15-30mins 0.0. I brew with hose water outside on windy days leaving my kettle open while using my wortchiller and have been totally fine.... Where you live and your home...

    Airlock activity BEFORE pitching yeast?

Neeoooooo! Don't dry hop, sounds delicious. Dry hopping and sours (or saisons for that matter) has not gone well in my experience. Make sure there is no airlock for at least a week and then bottle. Or you could go all out and age it for about 6 months and then bottle.

    Cherry Puree on Flanders

Chuck P. recommends as soon as fermentation (or secondary ferm in your case) is complete. Won't do it any good sitting on a buch of fermented fruit for a long time

    Airlock activity BEFORE pitching yeast?

Not pitching right after brewing is basically leaving a free for all feast of tasty yeast and bacteria food... The yeast you pitch will outpace just about anything else but if you don't pitch anything the first little bit of wild yeast or bacteria that gets in there will start to take hold. I...

Things about your co-workers that annoy you

I generally hate the reply all button. Certainly appropriate on occasion but Jesus.... We don't all need to see you say "thanks" or "ok" or whatever to the sender.

    Filtering a Fruit Beer

x2. I leave mine in quarters or bigger pieces and freeze then pasteurize before brewing. It settles quite nicely. Sounds like you just have a lot of fine particles... Long cold crash may just be te way to go for this batch. Try freezing next time (Charles P. has a good section on fruit)

Forgot to add mini mash to boil!

    Filtering a Fruit Beer

I just secondary my fruit beers for a week or so and use my auto siphon CAREFULLY as not to disturb the trub. I bottle condition too so by the time I pour a beer there are no noticeable fruit pieces....

Things about your co-workers that annoy you

ME! Hahahaha There are three men in my office of 20.... The women's bathroom is huge with multiple stalls. Men's is one room (and that's where we drug test new staff) can't tell you how many times I've had my morning Duce interrupted. The worst thing is they wait outside the door until you are...

X2. Hope you like sours! Should be tasty but be sure to sanitize the hell out of everything after this is done or your next batches will all have the a lil twang!
