    Major foam. Silly me?

    I just threw some powdered oak from a wine kit into the red ale I have in primary, (pitched friday night). My God, after ten minutes, the foam is now at the top of the primary bucket, which means I have some 20 liters of foam... I moved the thing into the sink. Why would it go spazzy like this?

    What do you guys see as the time frame for ideal drinking on bottle-conditioned beers? Does it depend on style? I'm noticing that after 1 month, the beer is noticeably better than at 2 weeks, and I understand it stores well for a long time... is it way better after 5 months?

    Dry pitched 15 g of Cooper's (from Australia) onto a stout kit at about 20 C on saturday night. As of Sunday night, about 4 inches of foam on top of the wort. I was pretty impressed. Anyone else used that brand?
