    Poor Attenuation

Hi All I have a continuing issue with poor attenuation in ales. As an example here is the porter I did 3 weeks ago. 5 gallon batch 9.00 lb Pale Malt (2 Row) UK (3.0 SRM) Grain 77.25 % 1.00 lb Mild Malt (4.0 SRM) Grain 8.58 % 1.00 lb Munich Malt (5.7 SRM) Grain 8.58 % 0.40 lb Chocolate...

    Determining AA%

This is exactly what I am going to do with my Cascade's for this year. Seems like the palate of the end user, ME, will be adequate enuff.

    Pumpkin Ale using.....real pumpkins?

I am not sure I would do that. Unless you know your buying heirloom types, you may very well be buying hybrid fruits. If they are hybrd, you have no guarantee they will bear the same thing next year. Many hybrids tend to 'revert' to the parent unless harvested at just the right moment. Squash...

    Wet hop ale - suggestions?

You guys have solved my conundrum. I have been growing Willamette for a few years with moderate (2 or 3 oz dried) results. Last year I founds 3 Cascade plants which I grew in pots with good results. I had the chance to visit family in Portland OR last year and took the opportunity to drive...

Dumping old Star San on the lawn?

Having spent 15 years in the landscape/turf industry I have to ask, why are you worried? This country spends WAY TO MUCH time and money of how the grass looks. Think about it, we feed, rake, lime, blah blah blah for something we will cut down and throw away. Does this really make any sense on...

    'Short' fermentation & possible solutions

Sometimes we do things just to see if we can. Everything does not revolve around money eh?

    'Short' fermentation & possible solutions

    Water Fermentation Chiller

I too have been dealing with temp issues, primarily in lagering, for some time. I have a converted 10 gallon MLT/Cooler and have pondered using it as a lagering cooler when I am not mashing. I have all the pieces but the controller. I work in seafood processing and have ready access to free...

    Hmmm. What happened here?

I brewed an English Ale with a friend about 10 days ago. We racked to secondary last night and the beer has a mildly sour aroma and taste. Recipe: 3 lbs Muntons Amber LME 1 lb Muntons Amber DME 1 lb Crystal Malt 40L .5 oz Styrian Goldings (60) .5 oz Styrian Goldings (15) .5 oz Willamette...

    making pear wine

Thanks for the advice Yooper. I wish I could freeze em but, with the hops and veggies in there, I have no room in my freezer. I do have ways of mashing though. I have taken the recipe you suggested and a couple others. Will talk to my LHBS/LHWS guy to get his take and give 'er a go this...

    making pear wine

Seems like, once again, I have stumbled on the sagest of all, Yooperbrew. My neighbor has 2 old, gnarly pear trees. Normally the fruit is hard and dry. This year has been very very wet and the fruit is wonderful! I want to make a wine. Problem 1, I have never made wine. I have been brewing for...

Some damage to my Willamette leaves...

+1 for Craig. If you can keep the pots, but not the plants, partially shaded, that should help them out allot. How big are the pots?

    oh man, japanese beetles!

Japs are so hard shelled, I am not sure it would be effective. I have worked in the landscape trade for 20 years and have never found anything outside of good old hand picking, or a flamethrower, to handle these buggers. The lures are best placed about 1000 feet away as they tend to promote egg...

    diacetyl hell

My Stella clone has come out with all sorts of diacetyl issues. A definite smell and a bit of taste. DAMN!! I am wondering if a bit of lemon in the glass might counter this and make it a bit more palatable. Has anyone tried this?

    Soils test results = wtf?

That is okay. Patience is the guiding factor in the garden, at least for me. It sure looks like a nutrient deficiency to me. If you have a good nursery around, take some of those leaves and drop by. Ask them what they think. What was your pH? An acidic soil can reduce the availability of...

How many bines are okay? What critters are these?

How do you know they are mites? From the data provided by the poster and some online research, they do not appear to be spider mites. Most bugs are NOT BAD. They are part of the eco-system. We need all the parts for the system to work right. To simply run out and find something to kill a...

    Soils test results = wtf?

Much less so than any lab will be. I landscaped professionally for 15 years and I always struggled to understand soil test results. I think your on the right track with having too much. Have you consulted with your local Co-Operative Extension Service or a good local nursery?
