First beer brewed for over a year

I had about 55-60 gallons under my belt and then took a hiatus from brewing. I just brewed a steam and it turned out really good. Funny thing is, I kind of didn't have my equipment totally dialed in! I couldn't find the screen to my funnel, so I poured the wort through some sanitized...

    Explosive Carbonation - Barleywine

It's been about 3 weeks since I bottled. The OG and FG were right on target. I know you guys say to wait awhile for Barleywine, but I just wanted to sample for fun.:fro: I just opened a bottle....the entire contents of the bottle exploded out of the bottle all over everything, including...

    Tried and True versus variety?

Do you find yourself having settled on a couple or a few beers that you know you brew well and always like the outcome? Or, do you continually experiment with new beers?

    Barleywine Final Gravity 1.02?

Started at 1.088. Brewed 1/26/08, today is 2/16/08, exactly three weeks. 12 lbs of LME White Labs 099 - Super High Gravity Yeast with Starter Hops and all the other normal stuff Does this sound about right?

    Weak link - bottling bucket

nOOb alert. The plastic bottling buckets are a weak link in my process. The spigot seems to inevitably leak (even if just a bit). Also, the spigot housing where the spigot "turner" resides has a little pin hole in it that sprays out beer unless you position the "turner" just right. Am I...

    Starting water temp?

I have been cooking for years. A lot of recipes say that you are supposed to start with cold water if you are making, for example, a stock, or anything where you are cooking something in the water. For doing a partial boil extract, is there any reason to begin the boil from cold water, or is...

    Barleywine Advice?

Doing a barleywine tomorrow. (Extract kit from LHBS). Going to do a starter for the first time. Using WhiteLabs 099 Super High Gravity Ale Yeast. LHBS suggested also pitching WhiteLabs 001 California Ale (not using starter for this yeast, as I only have one vessel right now). He suggested...

    Broke thermometer and hydrometer

within 5 days of each other. Bought a floating thermometer on Saturday. Same night after taking my wort temp, just barely set it down on the sink, bam, broken. Bought a hydrometer same day. Tested my finishing gravity of my Bock this evening and left in in the "thief". Went to clean the...

    Wyeast flaw

I am a nOOb. Probably, no definitely too new to criticize.... But, I had a snafu with my Wyeast last night. I smacked the pack just as I have in the past. Felt around for the little pouch, pinched it with both hands, and then smacked it several times. The package expanded a bit, but not...

    Overpitching

Seems like underpitching is a potential problem. Make a starter, increase the cell count, blah blah. What is the impact of "overpitching"? What if you used (2) vials of yeast instead of just one? What if you made your starter with (2) vials of yeast instead of just one? No...

    Lag period - pro's and con's

I have decided to begin using starters as a way to try to improve my beer. I have brewed 7 in the past month and a half, 2 are still in primary. I have made this decision based upon researching this website and deciding it is a very simple step that apparently makes a big difference. So my...

    Q-Paq

Does anyone know what this is? I did a google search to no avail. It is 8.5 liters and has a spout on it. It is clearly a dispensing device. Any more info?

Will adding two cups of dextrose

impact the flavor of the beer. Specifically, does it impact the influence of the hops on the overall flavor of the beer?

    Success!

Brewed my first batch Dec 1, 2007. Northern Brewer's Nut Brown Ale. Didn't do an initial gravity reading.:( Almost bottled after two weeks in primary, but it bubbled as we watched it the night before we were going to bottle. So, didn't bottle. Let it settle another week. Bottled on Dec 22...

You know you ARE a Noob when...

    1. You've brewed 25 gallons and your first brew is still in bottles for only 5 days. 2. You've sold most of your guitar equipment to pay for your beer equipment. 3. You stress over sanitization. 4. Even when you RDWHAHB, you still stress about sanitization. 5. You re-read posts on this...

Smack Pack - "Half" # of cells?

I'm sure this has been covered, but on a current thread the comment was made that smack paks only have "half" the number of yeast cells for a 5 gallon primary? Can you explain? Is this true as well for the White Labs Yeast Vials? Smack Pak = 1/2 yeast = reason to make Yeast Starter?

Nut Brown Ale - Final Gravity

1.0145. Does that sound right? It was our first brew and I failed to take an original gravity reading. Can you "guess" from experience brewing Nut Brown what the original gravity "should have been"?:o
