HERMS configuration, mashout, and other questions

True, I already ordered a bain Marie but I thought it was worth a shot. I haven't found many 1 gallon bains that narrow looking

What are the dimensions of that bain marie pot? I'm thinking this is a great idea

Tepache with Lacto... killed by Campden?

Hi all, So I brewed some Tepache and added some lactobacillus from Wyeast. I have it fermenting in a cozy heated Home Depot cooler at 93* F. Problem is, I added a Campden tablet to to the water to get rid of chloramines, and I think it may have killed off the bugs. It took almost 48 hours to...

Stressed yeast - what to do?

I found this page that made sense to me: https://byo.com/stories/issue/item/3170-stuck-fermentations-techniques Essentially add some yeast nutrient make a fresh starter and be sure to pitch it when it reaches high krausen Next time I need to pay better attention to my starter to avoid this...

Stressed yeast - what to do?

So I made five gallons of hard cider a few days ago. I made a starter with Wyeast cider yeast that lethargically bubbled up with activity. I didn't think anything of it and pitched it and called it a day. Thing is, my homebrew store has very slow turnover on yeast. I've gotten the sulfury...

How to know if beer is infected?

I have often wondered how often green beer imitates the flavors of infected beer. I know at least with sulfur flavors it can happen: "Rotten egg odors (hydrogen sulfide) can have two common causes: the yeast strain and bacteria."...

    Full Hard Lemonade recipe

Sugar wine okay yeah, I'd read about Kilju but it didn't quite click for me at first. I used nutrients yes, but I would add more next time and oxygenate with pure 02 as it didn't quite attenuate as expected. It ended up about 7% abv nonetheless and with everything added maybe 6.5% abv. I used...

    Full Hard Lemonade recipe

I thought I'd experiment with fermenting the alcohol (water, sugar, yeast) and then flavoring/backsweetening with lemonade. The higher pH along with temperature control produced a really mild, inoffensive "beer" that's honestly good on its own. I just finished adding lemon juice, CO2 and simple...

Brewing with Corn Meal, lots of Corn Meal

I do enjoy making Belgian candy sugar; I even add a bit of malt extract and a few drops of strong lye solution, kind of like what this page describes, except I add the malt/yeast nutrient after the conversion in a water solution to avoid recrystallization problems...

Brewing with Corn Meal, lots of Corn Meal

Thanks for the info; sounds like surface area is critical for conversion with corn. I need to use more rice hulls or do biab with corn meal or finely ground feed corn, but with more rice hulls the cheap appeal of this beer could start to go down

Brewing with Corn Meal, lots of Corn Meal

I think distillers get off easy using cornmeal because they ferment it and distill it without separating the wort from the the grains. We homebrewers aren't so lucky. It was definitely worth a read though! Seems like BIAB is a good way to go, I recently saw this YouTube video (I think it was...

Great tips, thanks for the advice :mug:

Brewing with Corn Meal, lots of Corn Meal

^^That's a really good idea, it would make clearing a stuck sparge a lot easier I'd imagine. The more rice hulls helped, I was actually able to (very slowly and cautiously) lauter the entire tun without any problems, but recirculating didn't work. Thinking BIAB, more rice hulls, or maybe...

Brewing with Corn Meal, lots of Corn Meal

I'm inclined to agree; first time I brewed I used 1 pound of rice hulls. 3x as much has been an improvement, but probably not enough :drunk:

Brewing with Corn Meal, lots of Corn Meal

Fair enough haha, I've done it before, and am brewing a second time now. It's been stuck both times; last time there was a lot of corn meal powder that ended up in the carboy as a result, but it compacted in the lees and turned out quite nice despite the high amounts of corn. Just kind...

Brewing with Corn Meal, lots of Corn Meal

Hi all, I came up with a recipe that I really like using corn meal: ---------------------------------------------- -10 lbs of corn meal -9 lbs of Pale American 2-Row -1 lb of crystal 10* -3 lbs of rice hulls +1 ounce of Northern Brewer at 60mins -fermented at 68* with US-05...

Refractometer seems to be giving off readings... help?

That seems more correct, how did you calculate the OG? :mug:

Refractometer seems to be giving off readings... help?

My refractometer gave me an OG of 17.9 Brix and a FG of 7 Brix, giving me around 9.5-9.7% alcohol by volume. It'd be nice to say that I balanced my beer so well that it tastes like a 7% abv beer but is close to ten, but I'm wondering if its more likely I'm running into some problem with my...

    Fruit Beer Caramel-Apple Ciderale

http://beersmithrecipes.com/viewrecipe/304473 This beer is really good for the fall season. I love to curl up with it and a scary movie, or any movie at all for that matter. Pairs best with dessert or popcorn, especially caramel-covered popcorn!
