    Be careful with flavors!

flavors not favors...so pissed I can't type....crap...I just ruined my saison. I have an awesome recipe that I was trying to make just a tad more "earthy" by adding a little natural apricot extract (2 ounces). It would seem (upon tasting what's going into the bottle) I've made apricot beer...

My (english) brown ales are coming apart!

So, what I seem to be experiencing is that over a month or so, the flavors that are initially well integrated seem to dis-integrate. So, instead of a malty/sweet/bitter/tart flavor all the way through - what I get is: way too much bitter in the first half, then way too much malt/sweetness...

    what are you reading?

reading robin Hobb's blood of dragon's (because I have to keep reading to find out how this ends), guy gaviel kay's river of stars, and how to brew.....finally.

    an outrageous idea!?!?! $$$

ok, so we see the beer industry morphing in such a way that microbreweries are taking off, and home brewing seems to be growing as well. I assume that this means that (among other things) that the American consumer (in this case) is again declaring their preferences where beer is...

how do you hold a beer? (bottle)

ok, sorry for another seemingly useless question (as a noob, I'm still examining the phenomena). So, I was at the LHBS talking to Woody (what else would his name be) and he tells me I should try a Belgian Stout (just bottled a batch last night). I said ok. he got one outta his fridge and...

do you roast your own coffee beans? why not?

ok, I know this is a home brew forum. but since there can be just as vast a difference between home (fresh) roasted coffee and store bought (or charbux) as there is between home brewed and store bought beer (although not near the complexity/diversity), if you drink a lot of coffee...why don't...

    when is it not beer?

I dont mean to insult the tastes of others, but being a home coffee roaster that that cant abide by flavorings added to "coffee" (snob...I know), how much stuff (fruit, etc) can one add to a brew before its not beer anymore? i hope to start a fiery debate like the one on odds, only more...

    Belgian Stout bottling

so, this beer is pretty dark and murky and the bottle the lhbs owner gave me was great....but murky...almost chewy (exaggerating a bit). the bottom line is that clarity was not a concern/advantage. so....what would be the point of waiting beyond the point of a stable post-fermenting specific...

    frozen bottles of beer

so I searched the site for "frozen beer" and I couldn't find any discussion about frozen bottled beer. I managed to freeze some bottles with my POS beer-cave fridge....and some of them leaked out of the cap. I tried one of the ones that had leaked....drinkable but somewhat bitter and somewhat...

    three weeks at 70 degrees

.....in the bottle. Heard that loud and clear. the challenge is 70 degrees....house doesn't stay that warm (consistently) in the winter. so, do they make an "un-fridge" that you can put your beer bottles into that will keep them at a particular (warmer) temp? has anyone cleverly made...

need advice on Brewers Best English Brown Ale - low OG second time

So, this is the second time I've purchased this kit, and the target OG range is described as 1.045-1.049. Neither time did the OG get close - of the two batches the highest was 1.039. I've brewed three other batches (Belgian Blonde, Irish Red, and Belgian Pale Ale) and the OG readings were...

    yeast won't cake in bottle

So, my first brew was an English Brown and I am very happy with it. My second brew, not so much. The Belgian Blonde tastes musty (maybe it should..) but drinkable. The problem I'm having is that the yeast isn't "caking" at the bottom of the bottle...it is sitting at the bottom, but instantly...

    disturbing the yeast cake

is jarring the yeast cake a bit a problem? was moving the carboy so that I could rack it to secondary per the recipe, and it slipped a bit and I loosened up the yeast cake.....

    rating the home brew kits

I'm new to the forum so not adept at searching. I would find it extremely valuable to have a section where the various home brew kits were evaluated and rated. A description of the final product (if done correctly) would also be helpful. this description would be especially useful if there...

    first batch a disaster

I got a phone call while I was doing the wort from my brother in law asking me how my first brew was doing....I left out the LME....it was right in front of me...anyway, discovered the error when the SG wasnt what it was supposed to be. I havent trashed it all yet, should I? thanks. (yeast...
