    Violent Fermentation

    Once the vigorous fermentation seems to be over with, it's over with. You aren't going to have another round of krausen trying to escape the primary. So, reattaching the airlock was a safe decision.

    Sounds to me like his pot is too wide. I had the same problem with my first partial mash, and solved it by splitting the grains into two bags. Even the "large" muslin bags don't stretch enough to cover the bottom of my pot, so I've got some still above the water line.

    Good stout/porter kits

    I've brewed Midwest's partial mash stout kit. Came out as a great beer, it just takes some time to age as other posters have mentioned. Mine was very drinkable after a month in the bottle.

    Booster?

    From what I remember, it's added while you're heating the malt extract. Just stir it in, and you'll be set. It provides fermentable sugars for the yeast without contributing much flavor. It adds about 1% ABV. For a better beer, I'd recommend ditching the booster, and picking up a 1.5lb package...
