    It's a puzzler - 16 day lag time?

I'm attempting to make a gallon of wine using, primarily, Ikea's Elderflower concentrate. I mixed the ingredients and let them sit for a day. Then I pitched 5 grams of EC-1118, rehydrated. After several days there was no activity and no drop in gravity. So I pitched a different yeast that I had...

    UT County co2 refill/exchange?

Hi Utah County brewers! *crickets* Come on, I know there are a few of you out there. Where are you guys refilling or exchanging your co2 cylinders in hoppy valley? I know the BeerNut exchanges 5 lb cylinders. I don't know if they refill. I know Salt City refills. Either way, they are both a...

    Boil Strength

I have a hard time getting a strong (full) boil on my gas stove top unless I cover the kettle. Would it be better to have a weak boil with the kettle uncovered or a pretty good boil with the kettle partially covered?

    Wyeast 3944 starter blowoff loss

I'm brewing a Wit using 3944. Apparently it is a "true top crop yeast". I made a starter twice as big as what I needed, planning to pitch half and save the other half for a future batch. The problem is that my starter overflowed, more than once. My total liquid volume after cold crashing is down...

    PBW, Bottles, and Hard Water

I've been struggling with bottle cleaning. My typical method is pour and triple rinse with hot water, then dry top down (fast rack). This generally works well. But some bottles need something more. So I tried PBW. I have hard water so from what I've read, PBW should work better than oxy. My...

    Apfelwein with mango brains!?

I've made several batches of EdWort's original recipe. This time I decided to try a variation. I subbed 2 gallons of the apple juice with 6 liters of mango "nectar" and 3 cans of apple juice concentrate instead of 1 pound of the corn sugar. I mixed this concoction on top of the yeast cake from...

    First wine, kit, degassing...

Making my first wine ever, from a kit. Everything was going according to plan until I got to step 3 - stabilizing, clarifying, and degassing. Instructions say to add stabilizers and stir, then add clarifier and stir, and keep stirring until a sample passes the puff test. First fiasco happened...

    Recipe suggestion for Wyeast 1084?

I'm brewing AHS Irish Red Ale tomorrow using Wyeast Irish Ale 1084. When that is done I would like to try pitching a new batch on some of the left over yeast cake from this batch (after consulting mrmalty, of course). Any suggestions on a recipe (extract or mini-mash) to use with this yeast? I...
