    No sourness at all. The ginger is very overpowering. I'm thinking of bottling this one instead of kegging. I tend to kick legs pretty quick and this one is kinda special.

    Nope. I was pleasantly surprised. Aroma was great, taste was better than expected kinda like a flat ginger beer with a kick. I let swmbo try it and she put down her glass of vino to finish it.

    Should I pitch more?

    Ok. I went ahead and boiled 2 cups of water, chilled to 80f and pitched, stirred after 15mins, waited another 15mins then added the slurry to the carboy. Hopefully it works out. Thanks.

    I made the Morebeer Pliney the Elder clone yesterday and pitched 1 US-05 packet without hydrating. I just ran a couple of yeast calculators and it looks like I need more cells. Is it too late to pitch another packet?

    I meant add the sugar in addition. And continuos hopping by adding a little bit of the 3oz of centennial and 3oz of simcoe every few minutes until flame out.

    I just got a brandy barrel.

    Update: This thing is not slowing down and still bubbling every 1/2 seconds. I think I'm going to be sitting on this a while! I've yet to add the sugar addition too.

    So I ended up doing my first all-grain and barleywine. All went well and it is currently in a glass carboy and I'll transfer into the barrel when fermentation slows a little. OG came in at 1.13 so I'm thinking it's going to take a while before it's drinkable.

    American IPA Dogfish Head 60 Minute Clone (AG) & Extract
