    Favorite "Two Hop" IPA combinations.

I believe it was a recipe from the Mad Fermentationalist (I think he called it Juicy IPA) that I used that had Simcoe & Galaxy paired in the whirlpool and dry hopping (in a stocking in the keg!), with Magnum for bittering. What a great IPA! I've brewed it twice now and can't keep a keg for...

    First Hard Cider, advice????

Glad to see that people are letting their cider age. I am generally so impatient I drink it all before its prime! This is strengthening my resolve this year to let it sit... let it sit... I've got 2 six gal carboys going with fresh-pressed juice from a local orchard in October. One is...

High gravity bottles not naturally carbing - HELP!

I agree with Beernik... had the same issue you have a couple of years ago and found that just giving it more time did the trick. Like 6-8 weeks for something at 9-10%. Be patient... and brew something else meanwhile!

    How to use Willamette hops?

Thanks everyone! I think I'm going to try that hopped up amber of Yooper's that you linked. Can't wait! I'll let you know how it turns out. On a side note - SO MANY new hops out there now... hard to know what to do with all the variety. And as a result, some of the classics of past years...

    How to use Willamette hops?

I got a hop rhizome from my daughter a couple of years ago, purported to be Willamette, and just harvested about a pound of fresh hop cones. My question is, what kind of beer should I brew with this? I'm an intermediate all-grain brewer and like just about every style of beer I've ever...

    India Pale Lager recipe?

10 days in primary at about 52F 3 days diacetyl rest at about 68F 30 days secondary (lager) at about 52F. I am fortunate that my basement in winter is perfect for lagering. The WLP830 was awesome at that temp. One of the best beers I have ever brewed - definitely a do again next winter... or...

    Ireland Craft Breweries?

Thanks all - yeah I looked up Orkney Brewery... not in Ireland... but that website beoir.org is a great starting point. Man, I didn't realize that most of these breweries were started in the past 5 years or less... not nearly as many as I'd anticipated either. Oh well... I've mapped out our...

Going to Ireland for the trip of a lifetime in a week... want to drink a lot of the classics but also find about about the Ireland craft beer scene... anyone have any suggestions? Spending time in Dublin, then driving the south coast... then biking western Ireland (Galway City, Connemara,etc.)...

    Where Are My Hops???

Thanks everyone - can always count on this forum for some good info & advice. These hops came without any analysis of their AA %, just dried & vacuum sealed in 4 oz lots. I think I'm going to use some pellets for my next couple brews just to be safe. I've also heard about people making tea...

    Where Are My Hops???

I just brewed a Bells Two Heart IPA and was so excited to use tons of this fresh leaf centennial hops that I had purchased from a local grower. Then I popped my first one yesterday... no hops... almost at all! No bitterness, no hoppy flavor, no hoppy aroma! Here's what I used: (all...

    India Pale Lager recipe?

I've got a wedding to brew for in May, and a nice lager- temp basement at the moment, so would like to try a nice hoppy lager recipe. Jack's Abbey (Framingham, MA) brews a nice IPL (their designation) - very clean and hoppy. I'll probably try to contact them too. But does anyone have any...

    Good Recipes vs Bad Ones??

Thanks for the great thoughts pjj2ba - a lot to think about there. This was a SMaSH al with MO & Nugget, fermented with Nottingham. It was my first AG brew with my newly constructed cooler mash tun. The mash went great, the wort SG was in the right range, the boil was vigorous for 60 min...

    Good Recipes vs Bad Ones??

Thanks everyone - maybe it's just a bit boring right now... I'll try other bottles week by week and see how it goes. I did rack 2 gal of this over Jack-Daniels soaked oak chips for a few weeks... maybe that version will be more interesting. I will let you know. Once again, thanks - love this...

    Good Recipes vs Bad Ones??

Hi All - I've brewed for just over a year now and made some really good beers... and a few not so good. But the recipes sounded so delicious! I guess I just want to know if there is any way to look at a recipe and say, "this isn't going to turn out well." I'm brewing about once a month and...

    Lagering temps

Thanks - that's reassuring. It's been 4 days and the airlock bubbling has slowed down a lot. I'll check the SG in a couple of days and see where it stands. Appreciate the help!
