    hard cider

    I Use the Mott's Brand 100% AJ and it works great. Has only Vit C. added. A good rule is to use a juice that tastes good, will produce a better end product.

    Yeast Question, possible stuck fermentation, Apfelwein

    I have a 5 gal carboy and I purchased a new Orange cap for it and started a new batch. I had a similiar problem, a bubble ring and no airlock activity. I discovered it was a lose fitting cap. I solved be putting a rubberband tightly around the Orange cap and airlock activity started immediatly.

    What would be the tell tale signs that a unpasteurized cider batch has been infected with nasties?

    Just Be Sure the Cider is preservative free. Asorbic Acid (Vitiman C) is the only acceptable Perservative.
