    I use these and yes it just screws onto the shank. And yes, it is just that easy. Takes 2 minutes to put it all together.

    Stout Tanks Conical Fermenters: 12.5g vs. 14.5g

    No need to put a blanket of CO2 on top. The fermentation process will produce way more than enough CO2 to fill the entire space and it will do so rapidly once the fermentation starts. As a matter of fact if you close off a fermenter entirely, the pressure can get pretty high.

    adding quick disconnects to temperature probes

    I thought about RJ connectors, but once those little tabs get bent too far, they are no good. So, I'm using 4 pin M12 connectors. They are dust tight and immersible in water making the connections well protected. Here's one source...
