stuck thermometer? boil started with grain in kettle.

I did my second biab over the weekend. I use the thermometer that came with my turkey fryer. (Mechanical with about a 12 inch stem.) After the mash, I turned the propane back on to heat the kettle to 170 for mashout. I checked the thermometer every couple minutes and it just wasn't...

    conditioning == conditioning?

For those of us that bottle the standard process is: Ferment in bucket Condition in carboy Carb/Condition in bottles I have a recipe which I found was great with 1 week - bucket, 2 weeks - carboy, 8 weeks - bottle I left it in the fermenting bucket 2 weeks and the carboy 3 weeks this...

Using a plastic food drum for fermentation in a nano-brewery?

I'm planning (fantasizing) about building a nano-brewery. 1 BBL capacity per brew. (31 gallons) The brew day gear is a reasonable cost, but if I want to do a batch per day, 5 days a week, and ferment for 3 weeks, then I need 15 fermenters. A new 42-gallon Blichmann Conical fermenter as an...

low propane flame - user error!

Just a heads up for other noobs. I've done 5 or 6 batches using my turkey frier for the kettle and propane. I just hook up a 20 lb propane bottle and off I go. I found sometimes my flame is puny. I thought I was getting debris in the regulator line somehow. A couple days ago I found...

time to bottle, but I have cloudy beer

I did a maibock recipe about 5 weeks ago. I racked it from primary to secondary about 4 weeks ago. It's still cloudy, so I'm wondering what to do. I read one option is to put a 5-gallon paint strainer in my bottling bucket, then rack to it. Then slowly remove the paint strainer. I'm...

First BIAB - Need recipe conversion help from extract with specialty grains

I've done the below recipe as an Extract plus specialty grains 3 times now and it is fantastic. Now I want to try it as BIAB recipe, but I'm not sure I'm doing the conversions, etc. right. Also it is my first BIAB, so I'm documenting the details of what I understand the process to be below...

Using 6 month old yeast package?

I bought a Wyeast 3944 Belgium Wit package a while back. It was packaged at the end of September. I ended up not using it (I poured my wort on an existing yeast cake). It's been in my fridge the whole time since then. I want to brew a belgium wit this weekend and I'm wondering what I...

first biab - 7 gallon kettle

I want to do my first biab, but I'm confused by the water volume I need. I only add water once at the beginning right? I've read people saying a 5 gallon batch with biab needs a 10 gallon kettle. My kettle is only 7 gallons, so can I only do a 3 1/2 gallon batch? And should I start with...

3 more batches under the belt - more questions

This fall I did 2 Wit Biers and a Dunkelweizen. I haven't tasted the dunkel yet. Things I've observed: - The wit biers taste different one bottle to the next. Also the carbonation variation between bottles can be huge. I've had a couple bottles with massive carbonation. I brewed...

Am I buying the right ingrediants?

I'm going to do a DunkelWeizen next weekend. All of my recipes have come from the LHBS so far, so they had the exact ingrediants. This time I think I'm trying something from the web. If there is a known good recipe let me know, otherwise I'm going to try this one...

confused by terms: extract / biab / etc.

I took a simple class at my lhbs on how to brew and I've done a few docs batches. Are these extract brews? Bias? Other? Basic Process: Bring 2 gallons of water to 150 deg. Put various crushed grains in a grain sock in the water for 30 min. Discard grains Heat water to a boil Add lme, bring...

Feedback on Sam Adam's White Christmas Clone Recipe?

I wanted to do a White Christmas clone. I didn't find much via google. I'm a relative noob, so I went to my lhbs and asked for advice. I've only done extracts, so asked them to propose a LME based recipe. They suggested: Extract: 4 lbs PL LME 2 lbs Wheat LME Grains: 10oz White...

    Sam Adams white christmas clone?

Having a full 3 extract based brews under my belt, i'm wondering how hard it is to do a clone? In particular, I really like the Sam Adams White Christmas. It's similar to a blue moon. Is there a resource for finding clone recipes? Thanks Greg

    How much water?

I'm doing my first non-kit brew tonight: It says to use 4 gallons for the steeping water which seems fine, but it never says to add water to get it to 5 gallons like I'm used to. Should I just assume that I add water to 5 gallons after the main boil? Also, I'm guess the 2 listings of...

forgot to buy steeping bag - alternative?

I've done a couple kits and they came with all the consumables. Today i went to the lhbs and bought a recipe. I didn't really go through what i bought until I got home. First I noticed they did not give me any cinnamon. My wife has tons of that so no issue. Then i realized they didn't put a...

put flavoring hops in way early, what result?

All, I've got my second batch going. It had a 55 min boil. I was supposed to but bittering hops in at the start and flavoring hops 10 min from the end. Unfortunately I put both in at the start. It's witbier kit. Any idea how bad I screwed up? Thanks
