    Mmmmmm...apfelwein

It has been way too long since I started a batch of apfelwein! But amidst finishing up 6 gallons each of Sangiovese and Tempranillo and prepping for Chardonnay, I found myself seriously wanting some apfelwein. It was started yesterday and I look forward to sampling at Thanksgiving and serving...

    A thousand thanks...!

... To all who post here, answer "dumb" newbie questions, etc. This weekend my husband helped me bottle a number of gallons of fruit wine which have been sitting in my wine closet for almost a year. In left them to age in their gallon carboys, thanks to some sound advice, and there was only one...

    Going. To. Scream.

Hey y'all. Been awhile since I've been here. I've done several wines successfully, but the very first one I put up for aging was a blueberry wine. I got it out today to bottle...and saw that the airlock had gone dry. The wine is sour so is unusable as wine. Blast. However it might make a quite...

    WOW! Dried elderberry wine!!!

Mind you, the stuff is just now about a month old, but I racked my gallon of dried elderberry wine this weekend and...ooooooh that's gonna be good. Definitely going to start a five-gallon batch as soon as Ed's Apfelwine is out of its carboy. That is going to be a keeper. And for the rest of...

    Love trying new stuff!!!

So today I broke open a box of loose tea I'd bought from Mountain Rose Herbs. It's called Hibiscus High Tea and it makes Red Zinger taste like lawn clippings. At any rate, remembering that one can make herbal mead and then call it metheglin (although you'd probably best learn to pronounce...

    Allergic people in your house?

I've started fermenting wine and mead and am having a great time at it. But...I'm allergic (food and airborne) to yeast, mold and fungus. So far I don't think I'm having any issues but on the other hand, I have a nasty cold so who'd know?Anyone have yeast-allergic family members? Any feedback?

Blueberry's working away, but the mead...

...is just sitting there. Now, mind you, I just put the yeast in today, so I'm being a "helicopter mom" to my primaries, I know. But the blueberry is doing well, and the mead just sitting there has me worrying. Mead recipe: 3 lb local honey 3 qt water acid and yeast nutrient and a...

Heh. Its good to have a son...

..who works at a country club. Ii was telling him about my new passion the other day and in a moment of inspiration, asked him to bring me bottles from a night's usage, if he could. He said all they do is throw them away so yes, he could bring me some. So I got home this afternoon and what do I...

My husband and I own a small ranch outside Llano, Texas. Granite uplift geology, although most of the Texas Hill Country is limestone. Apart from a couple of cows, we have beaucoup Texas persimmons, and this year there is a bumper crop. Some are going into jelly and jam, but I want to take a...
