The importance of time, or, how I learned to stop worrying and love aging.

We hear a lot on these forums about how time can cure damn near everything (except oxidation or hop aroma :D ) but I don't think I ever bought into it until now. In fall of 2012 I made a pretty experimental brew, namely a mulled apfelwein. After four weeks in bottles, it had not carbed even in...

    Logo Critique

Hey everyone, New logo for the brewery. Thoughts, critiques, etc.? UPDATE: Original post was horribly worthless; new in-depth version below. Firstly, this is not a commercial venture and will remain that way, barring my career going horribly south (which I am hoping it doesn't :D), so...

Thoughts for a mead series name/theme?

Hi all, So, all of my beers are arranged into named series, and the titles of the beers have themes, e.g. all of my Belgian's are in one series and have a consistent theme of their names. I recently started making meads and I'm totally at a loss for a name/theme for the series. Any ideas?

How have you injured yourself brewing?

Not sure if there is one of these threads already, but I figured it's best to share our mistakes so that others don't suffer similarly. So I'll start while it's fresh. Was standing on my radiator cover to adjust my brand new temperature controller. Stepped off of it back down to the floor...

Breville Juicer for Cider: Do they work and do you need to peel/core?

Hi all, Like most of you reading this, I love cider. And cyser. And apfelwein. And all sorts of other tasty fermented apple beverages. However, I recently moved states and in my new location, good apple juice is incredibly expensive (~$12 / gallon, vs. $6 where I used to live)...

How much have you changed brewery names?

Not sure this is the best spot on the forums, but it is next to the venerable Brewery Names thread, so it seems as good as any. Just out of curiosity, I was wondering if you've changed your brewery name over the months/years/decades and why (if you feel like sharing). I've already changed...

WTT 2012 whole cone hops in the Portland area

Hi all, I have a friend who grows hops commercially (most for the BMCs) and he has supplied me with far more than I could ever hope to use in time, so I'm trying to make sure that the extra doesn't go to waste. I have the following available for trade, preferably for other varietals (pellets...

    Pressure Cooker Recommendations

Hi all, Firstly, my apologies if this has been discussed at length previously, but Google didn't reveal anything. I'd like to (or rather I have to) get a pressure cooker for sterilizing equipments/solutions for yeast freezing as well as for canning quarts of wort for starters. I have...

    Krausen on cider?

I should preface this by saying that this is not an "Is my beer ruined?" thread, and I don't need to RDWHAHB. :) I pitched my second batch of cider yesterday and have witnessed the same result with each. Fermentation has kicked off quickly (using an ale yeast) and within 8-10 hours, I have...

Yeast Selection for a North American Dubbel

Hi all, I'm going to be doing a partial mash Dubbel for my next brew (hacking together a recipe based on my own tastes from the many available online) and was wondering about yeast strains. I've spent much time on this forum and elsewhere reading up on the common strains used, but as I...

Best equipment to invest in next?

Hi all, Firstly, let me just thank everyone in this community. I've been lurking on this forum for a few months and it's been an invaluable resource in my foray into brewing thus far. With that out of the way, I've been brewing for a few months now and am loving it so far. I've done several...
