    I'd leave it in primary for 2 weeks instead of one. use lots of yeast, and aerate the wort well. fermentation temp is critical for a lager. make sure the fermenting wort stays in the yeasts ideal range.

    why would anyone intentionally make a bottle of puke??? the best thing to do is make one that doesn't take long to be ready, then as soon as that is done, start the long term batches. that way you can enjoy the first one while waiting for the other to finish.

    I never heard of anyone smoking peaches. much less brewing with them. but then all good ideas were new at one point. I'd think the smoke should fade given enough time. hopefully the peach flavor doesn't also fade as fast. you could try adding in non smoked peaches to increase the peach flavor.

    I wouldn't add orange peel, but that's just me... it could turn out good. I don't think either of those 2 yeasts would be wrong for it. pac man would probably be cleaner, and ferment a couple extra points compared to the london 3, so it would depend on what you wanted the yeast to do.
