    Cream Ale Recipe in Development

Hi Guys! I want to get into cream ales. I been poking around, reading bits here and there, and and formulating a first attempt, after which I will refine into perfection. I am considering an extract with grain kind of build, but honestly I have no idea what effect all extract/all grain/mixed...

    Cream Ale...What is that taste?

Hi Guys, I need some help figuring out how to replicate a cream ale from a brew pub back home. Its golden colour and easy drinking. Specifically it has this taste, this magic taste I need to recreate. The taste is in the finish and the best way I can describe it is that its like a river of...

    My first mead

Hi guys! I'm hoping to make my first batch of mead this weekend and wanted any tips you could afford to give me. I'm also looking for a basic mead recipe. I would like to add juniper to it (has someone tried this? Is it good?). Lastly, I have a 23L carboy (I think the US equivalent is...

    Brewing with Honey: Final Findings

To anyone reading this, I would recommend pasteurizing longer than I originally stated. I just cracked open a new bottle to find it very dry and not very honey like. I suspect not all the yeast were killed in this process or that the bottle(s) are not perfectly sealed.

    Brewing with Honey: Final Findings

I would try it. My guess is yes because like honey a lot of the flavor is the sweetness and you want to stop it from fermenting out. I'm also curious about molasses since I use it in gingerbread cookie beer.

    Brewing with Honey: Final Findings

To be honest I don't know, but I expect the answer is yes. Because more sugar is going into the bottle than normal it is very likely you could get some yeast buildup that if it settles could lead to a more clear beer.

    Brewing with Honey: Final Findings

I will do my best to answer these good questions. 1) Yes, for example, if you add 2kg of honey to the beer and it only needs 100g of honey to carbonate than you should have 1900g of unfermented honey in your beer. The control for honey taste is how much you add. I think 2kg is plenty...

    Brewing with Honey: Final Findings

I thought I would make this into a new topic since I finally have conclusive findings about the best ways to brew beer with honey and have the flavor stand out. This endeavor has taken me over a year of tinkering and more than a few brew sessions to pin down. A lot to credit goes to the people...

    Am I doing something wrong?

hi, I decided to try bottling using glass bottles. I went to the recycling plant and bought plenty of commercial beer bottles (the kind with threads on the top. I bought some caps and rented a capper. The capper doesnt seem to reliabily cap the bottles. I am wondering if I need bottles...

    The Pappers Technique and PET

I tried it today with some other beer I had just bottled. The bottle bulged a bit, but not so bad it couldn't stand or look like a bottle anymore or be used again. The beer, which I chilled in the fridge stayed carbonated and tasted fine with no plastic smell. Still not sure if I want to do this...

    The Pappers Technique and PET

As mentioned, I'm already doing a lot for the flavor including using honey malt. I'm just here to know about pasturizing PET bottles. Has anyone tried it? I heard a theory that the soft plastic combined with the increased pressure in the bottle makes the bottles bulge, but no one seems to have...

    The Pappers Technique and PET

Hi all, I was directed here from the general techniques of beer making in my quest to make a purely amazing honey flavored black lager. I have done several things to make the flavour stand out, but nothing gives it the honey oomph I want. Then I got this idea, what if I add extra honey to...

    Cold Crashing?

Hello one and all, First I would like to apologize if the topic name is miss-leading. I really do not know if what I am about to ask is an example of cold crashing since I really don't know what that is but here it goes... A while ago someone recommended a possible method for preventing...

Brewing with Honey - Maximizing Flavour

I thought I would update the topic since the last batch is complete and I am in the midst of brewing an updated version based on comments. The final version had some additional success. There was certainly an improvement in flavour in some bottles (a little unsure why it was somewhat...

Quick, need a low alcohol tolerance yeast

In my experience, the later you add the honey the more flavour is carried though fermentation. The yeast begin converting the gain into alcohol, making the level of alcohol higher and the solution more inhospitable for yeast before the honey is added. The effect is small, but noticeable. This...
