    1+ Captain !!! The beer you are describing would not be a lager. Stout is most often brewed with Irish Ale yeast. A lager is a clean beer, this will likely not be "clean at all".

    Your temps are not in the right range for 1098 . It's happy at 64-72 . So even your high temp of 62 was still too low. I also attach my probe to the side of my carboy with an insulated pouch . Packing bubble wrap works good .

    I would agree. Never used drops but seems that I would drop in the bottles and then add the fermented wort. I would be worried that if you added the drops to the bottling bucket you may end up with some inconsistencies . Let us know how it works !
