I can confirm the 100V Schottky diodes work just fine.

Thanks, I forget to specify that it was still a Schottky diode. Just looking at a 200mA - 100V DO35 instead of the 200mA 30V DO35.

May be a dumb question, but what would happen if the 200mA 30V Diode was replaced with a 200mA 45V or 100v?

Definitely plan on using lactic acid to adjust the PH to get my mash to 5.3. Is the amount of sodium going to mess me up? I know it is doing it's job, but the amount is a tad high. I can mock up blending with RO water in BrauKaiser or EZ water and it helps. But, am I being too paranoid about...
