    When you say 'characteristics' what do you mean? Obviously it will be different from the original, but I'd expect that. Such things as thinner mouth feel, paler colour are fine.

    Mauribrew yeast?

    I have just done a couple of extract brews with it. All I can say is "fast fermentation!" both times it took off after about 4/5 hours and reached estimated FG in less than 48hrs. final product hasn't been sampled yet.

    thanks for the tip regarding flaked adjuncts. I'll definitely look into that. i wanted to get a few different malts in there so i could get a varied flavour. maybe i'm trying to get too over complicate things.
