    Yeah I'm aware fermentation is longer than just the bubbling air lock and I can't keg because I'm not equipped to do so. I'll taste in few here and check the gravity. The OG was 1.040 and I expect the fg will be less than 1.010.

    The vigorous part of fermentation ended in about 4 days, I am taking my first sample today but I have a feeling it's as done as it will get. I am excited to taste it though.

    I haven't got around to reading about the quality requirements yet but even so, if you are renting a building and using that much water and natural gas among other ingredients and not turning a profit I don't know how you'd last through the year without incurring massive debt.
