    Opening bottles

    Theyve sat 4 weeks or so at about 68-70F. Chilled one at 4 days and second at 6... Thinking about letting the next one sit in fridge for 2 wks...

    So far so good, i had the bucket covered its only day 3 in primary... and it blew off and scared the living hell out my dogs. Is this normal for it to blow off? What did you guys use? Im afraid what will happen if the O2 gets to it? Or if this even matter? Thank u.

    Thanks guys, what temps do u guys recommend? Also what type of ale yeasts have you tried? I have 4 bottles left that i havent opened, ill try letting them sit a little longer before trying them.

    Does this wine give off alot of heat in the taste? If so can i avoid tis by changing something? Also i was told not to leave on the peels due to pesticide? What are your thoughts?

    Its been bottled for 2 wks at room temp and i opened one to see and there was no carbonation, also the cider tastes like mild jack daniels hahaha... Tis was my first attempt but im still lightly disappointed... Now what? I got about 8 bottles left...

    Back sweetening, nasty batch

    Okay for starters it was a red star champagne yeast... Its not really a rotting egg smell so i guess more vinegar smell? Original gravity was at 1.55 now at roughly 1.05... Went exactly by recipe and put in secondary at 4 wks... Its been in secondary container for 2 wks... Surprisingly clear...

    So one of my batches is ready to bottle but it smells awful, and tastes like crap too... Is it worth trying to back sweeten? Ive never done it so need your help and input please!
