    Searching for a recipe

TBL - yup, that's the general plan. I was mainly curious if anyone narrowed down the hops and yeast. There is no specific hops character that I can discern, so I suspect no late additions. Anyway, first batch in a couple weeks.

Anyone ever tried to clone this? It's a Caribbean beer, and has a nice bitter taste. I'd love to clone this, or maybe make a variant. Thanks in advance.

    First AG - California Common

Well, the haze is still settling in the keg, but this batch tastes great!! Feeling very confident in my AG brewing at this point. Let's see if my first alt bier comes out as good - done fermenting and ready for keg.

I think apples emit ethylene, not benzene.

    oxidation question?

Chandler, this is the old "wine into vinegar" conversion, but with beer instead. I don't know if that was the reaction that happened in my case, but it definitely involved oxygen (I knew I was incorporating O2 since I didn't have CO2 to purge the secondary), and I knew the temp of secondary was...

dry hopping in keg vs secondary

I put hops in a muslin bag, tie a knot, and suspend in keg with cotton butchers string for a week. Take the bag out, carbonate, and serve. Works well for me.

    First AG - California Common

Frazier - thanks for the feedback. I will look at other ppls dip tubes to see if I can improve my config. I agree that 3/4 gallon is a lot of wort down the drain. Another thought after reading more is that the 2nd and 3rd runnings may have been a little stronger with hotter water - better...

    Carbonation in secondary

I struggled with what looked like continued fermentation in my secondaries. Turned out I be a different conversion - most likely ethanol to acetic acid (happens with warm temps and excess oxygen getting in during transfer to secondary). Since I don't have a lagering setup, I now just do...
