I'm thinking about brewing a Smash with Pilsner malt, Nelson Sauvin hops and using a wine yeast, probably D47, Cotes des Blanc's or Vintner's Harvest AW4. Thoughts on this?

I would do a Belgian Dubbel or Quad in it. Pairs very well with brandy.

Acidrain, What modifications do you use to use the keg as a fermenter? I have been thinking of doing the same but looking for ideas that others use successfully.

Not in Savannah, but check out Golden Isles brewing over in Brunswick. Its a LHBS that opened up close to a year ago. Might find a partner over there. Good luck.

I'm brewing a 5 gallon batch of Ommegang Hennepin Saison with minor tweaks. First time brewing this recipe. Hopefully it works out. Cheers my fellow home brewers!

Also, during your mash stage, did you stir at any time during the 60 min? I stir about every 15-20 min during the process. Helps move the water around, making sure nothing is clumping up. Agreed with the mention to possibly double crushing, but you can run the risk of getting too much grain in...
