Using yeast cake to bottle a barley wine

About 10-11 months ago I made an 8 litre batch of barley wine that I sorta just left hanging around in the apartment. What can I say, I'm lazy. Anyways, I bottled a pale ale that I used WLP001 in today and left about 1-2 litres of beer on top of the yeast cake. Can I scoop up some of that...

Adding more yeast to primary, or cross fingers?

I brewed a barleywine about a month ago. Things went a bit tits up, and I got an OG of 1.121 (supposed to be 1.083). Took a reading 2 weeks ago, and the beer had fermented down to 1.042. Measured again today, and it hasn't moved. I swirled the bucket a few times to try to rouse any yeast, but it...

    Should I add more yeast?

So I've got some spare time on my hands, and I think "I'm going to brew a small 10l batch of something." How about a barleywine? Had a recipe that had 1.087 og, 9.2% abv, etc. Standard stuff, I guess. Now, I know my equipment setup in Beersmith 2 isn't exactly spot on, but this little bastard...

    Bloated Wyeast smack packs

Just got two Wyeast 1056 smack packs in the mail, bloated. I'm brewing today, but I wasn't planning on using these two packs, but rather use US-05. Can I open the packs, make a "starter" (won't be getting much time to rev up) and pitch it, or should I just forget about them and use the Safale...

How crushed should cara/crystal malts be?

For my last two batches I've crushed them with a rolling pin. Two turns over with pretty much weight on the roller. Color and sugar definately have been extracted during steeping, but maybe I should be getting more? Should it look like this picture...

    Brewing two IPAs this weekend

I'm brewing a "regular" IPA and a double IPA this weekend as my 2nd and 3rd brews. As I'm pretty darn new at this, I hoped some of ye olde brewers would have a look at my recipes and comment on anything that might be "off" with them. :) NB! Everything is listed in metrics Green Bastard...

    Fermentation stuck at 1.023

Classic question here.. My APA is stuck at 1.023 after 10 days in the primary (measured after 7 days and after 10 days). Estimated FG in Beersmith is 1.012. I used 2,6kg Amber DME and 0,5kg CaraMalt 25l in an 18 litre batch. After cooling the wort, I pitched 2 packs of rehydrated US-05...

Noob - I boiled all 20 litres. Why did I do that?

I'm a noob in all aspects when it comes to brewing beer. I've read quite a bit about it before I set into this, but for some reason I boiled the entire 20 (actually 24) litres of water I used for the boil. First warmed it to 70 deg.cel. to steep the cara malt, then boiled it all for 60 mins with...

Going to fire up my second brew

Me and a pal recently (3 weeks ago) brewed a 5gal batch of Cooper's IPA. Foolish as we were, we followed the recipe on the can. In addition, we did a bunch of other rookie mistakes. It's still in the bottle, so we haven't had the chance to try it yet, but I suspect it's less than perfect... :P...
