Would like to get away from kit brewing snd do my own recipes

A few things I have done. They aren't complete create-myself recipes but I feel they are a good step in that direction. 1) Modify a kit. Get an extract kit as it sounds like you have been doing already and try updating/adding/subtracting things to it. I recently bought the MoreBeer Thanksgiving...

    Online Shopping for Brewing Supplies

Austin Homebrew, Midwest Supplies, Northern Brewer, and MoreBeer are the ones I generally consider.

Heff on yeast dor over a month okay?

Ya, should be fine. You can always give it a taste and see how it is but I really wouldn't stress too much.

Fermentation stalleled - another panicked brewer

Measure the SG? Is it where it should be? Check to make sure your lid is creating an airtight seal?

    I think it is flammable

High gravity beers generally benefit from aging, especially since it has only been 2 weeks since you brewed it. Even low gravity beers are traditionally fermented for a bit longer than 2 weeks. If it was indeed done fermenting, might as well let them sit for awhile (month or two or more) and...

    Off OG - Pumpkin Ale?

So I just recently brewed the Thanksgiving (Pumpkin) Ale extract kit from MoreBeer. It didn't call for actual pumpkin (only pumpkin pie spice) but I decided to add some anyway. I put all of my information into BeerSmith and the OG was supposed to be around 1.058 or so (I added in a bit of...

    Post your infection

I brewed a Rogue Dead Guy clone on 4/24 of this year and have been busy/lazy since (quit job, moved, got married, started PhD program) and finally got around to bottling it today. This is what I saw... It is VERY sticky. Looks like sawdust on the surface but is squishy (and sticky) to the...

Yeast Starter or 2 packs question?

Almost created this topic myself, glad I decided to look first! Thanks for the info everyone. I think I will try double-pitching once or twice more before I try pitching a starter.

Is it possible to back-sweeten AND bottle-carbonate?

Thanks everyone! I read that pasteurization thread recently but I didn't put 2 and 2 together that it could be used to help with carbonation.

Is it possible to back-sweeten AND bottle-carbonate?

Is it possible to back-sweeten AND bottle-carbonate the same batch (asking because it seems like the only way to back-sweeten is to kill off the yeast and then add sugar...and then if there isn't any yeast then there won't be any carbonation)?

First Cider - Proper Fermentation Times and Other Questions

I just recently got into brewing beer. I have a few friends who are averse to gluten so I decided to try a cider. I looked through this forum and the cider recipes forum and decided to go with this. Here is the list of ingredients I used: 2.5 gallon Safeway 100% Apple Juice 2 gallons Safeway...

    Schwarzbier

Grimm Brothers is one of the microbreweries I hope to hit up next. I enjoy Wynkoop's B3K Schwarzbier which is now in cans in some places here in CO and on tap in several locations as well.

    In Portland...any beer suggestions?

Pretty much this. I think Portland is the city with the most breweries per capita, or per population, or something like that. Bottom line, there is going to be a brewery pretty much anywhere you look. Some I have heard of: Rogue Deschutes Hair of the Dog

What gateway beer for wife who likes sweet carbonated wines?

+1 on Magic Hat #9. Also, Abita's Purple Haze is another good tasting and fruity beer. Those generally seem the way to go for people who don't yet appreciate the taste of the more intense beers.

    Craft brew in trouble???

They have to get those colors and flavors out of the beer somehow!

    Scorching?

I literally did the exact same thing during my first batch. I found out that there is good news and bad news about this. The Good News: 1) It will not RUIN your beer and 2) you will learn something first hand that you will know how to handle next time The Bad News: Your final product may...
