    Apollo Citra Ale

Did this with the same grain bill, but LBHS didn't have much citra. Subbed mosaic. Did away with the 30 minute hop add, upped flameout to 3 oz. Mosaic, .5 oz Apollo. Dry hopping with 2 oz. Mosaic.

    What are you drinking now?

Drinking the Apollo Citra IPA that I kegged on Monday.

    Apollo Citra Ale

Turned out pretty well. Happy with the grain bill. The 12L Swaenn works. Really happy with the yeast, too. Next time I think I will cut the 5 minute hops and bump the steep up. The bitterness is about right, but doesn't have the juicy pop I imagined. Perceiving more classic west coast citrus...

    Galaxy Hops -- Short supply?

It's my favorite hop and my LBHS hasn't had it for quite awhile.

    Apollo Citra Ale

Yeah, shooting for an IPA. Was gonna get 10L crystal, but this is a Belgian 12L and it tasted really good raw. If I upped the steep, should I cut back at the 5 and 30 adds? The hoops listed are all I have.

    Apollo Citra Ale

I've never really come up with a recipe on my own... Just want some opinions on this before I try it, to see if I need to adjust hop schedule or anything. Type: All Grain Batch Size: 5.50 gal Boil Size: 7.57 gal Boil Time: 60 min 13 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 1 92.9 % 1 lbs...

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

I may give this a go with some wlp0029. Anyone done this recipe with that yeast?

American Wheat Beer American Wheat Beer - 2nd place Best of show - 2011 HBT BJCP competition

Mine came out nice with the WLP029 Kolsch yeast.... That yeast might replace Notty as my "go-to". Galaxy hops faded a bit, but it's still a nice beer.

    Man, I love Apfelwein

Thanks. Bottled tonight - decided to do this batch still, didn't prime. The wife already wants me to make more after tasting from the bottling bucket. Might put the next one on tap.

    Man, I love Apfelwein

I pitched K1-V116 yeast into my apfelwein on January 13, and it's down to 1.000, samples taste really good. I'd like to bottle this to free up a carboy, but there are still bubbles rising in the carboy and the airlock is still popped up. It's almost like it has carbed in the carboy, but I don't...

    What are you drinking now?

Dogfish Head World Wide Stout This one is boozy, but it's nice.

    Man, I love Apfelwein

I've had a batch in the primary using K1-V116 for five weeks now. It's been bubbling away the whole time at 60 degrees. The gravity is measuring at about 1.01, and I'm still getting bubbles in the carboy. I'm not sure how much further this thing could possibly ferment. The samples are tasting...

American Wheat Beer American Wheat Beer - 2nd place Best of show - 2011 HBT BJCP competition

Doing this with Galaxy instead of Cenennial and WLP029 tomorrow. 2nd all grain - had some water volume mishaps on my first AG that resulted in a gallon less into the fermenter. Hoping to smooth that out tomorrow.

    Anyone try BRY-97 yet

I made an amber ale with BRY-97. It worked really fast, but it took fooooorrrrreeeeevvvvverrrrrrrrrrr to carbonate in the bottles. My result is super clear beer with no straining or really any attention paid to keeping sediment out of anything in any part of the process. Beer tastes really...

    BIAB Mashout / Sparge

I will be doing my first full BIAB tomorrow, starting with Northern Brewer's Irish Draught Ale. I plan on using something similar to Deathbrewer's method, using two pots. One for mashing, one for sparge/boil. The instructions call for a 154 degree mash, followed with a 170 degree mashout. This...

Easy Partial Mash Brewing (with pics)

Thanks for posting. Took my first stab at a 2.5 gal AG using this method. I am a bit limited with my equipment, as I only have one pot that is 4 gal... I had to get a bit creative with the pots to get all of my sparge water together. I made a couple of blunders: I meant to mash with 1.25...

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

Making a 2.5 gal a.g. batch tonight. Hit the lbhs just right and landed Centennial, Citra, and Galaxy. Original intent was to use Centennial and galaxy. Should I wait squeeze some Citra in late or at flameout?
