    Not brewing, but bottling up a Belgian brew, a California common, and taking an IPA to the secondary for a little dry hop :-) no brewing but busy nonetheless.

    If it smells a bit too hoppy just age it a tad longer. The aromatic side of hops tends to dissolve over time. The flavor is more what you should pay attention to. That sticks more.

    I made a bourbon ale that was not very good when it was early on in the process. I bottled them and forgot about it and left it in my brew room for several months. Now, 4 months later, it's one of the best batches i've done. It's crazy how much of a difference time makes.
