    Yeast Tolerance

    I am making a 1 gallon batch of mead using the Lalvin ICV-D47 yeast and it says it has an alcohol tolerance of ~14%. The packet is also geared towards a 5 gallon batch. I understand that the tolerance is due to it not being able to consume more than that much sugar for a batch that size, but...

    Explain this one

    You're just making it like the old ages. Brewing beer wasn't originally such a precise activity. The cleaning of all utensils and proper equipment is just precautionary and allows for similar results over and over again, that doesn't mean you have to do it that way.

    Secondary question

    Most of the fermentation happened when it was in the primary. Racking it into the secondary is mostly just to get most of the sediment out to make the beer clearer, and to condition the beer.

    I'd say measure your 2 fermentors and then look at the specs of the freezer. Says its 33.25"H x 22.06"D x 28.34"W, might be a tight fit but seems like it could work. Don't forget to add the height of the airlocks.

    Changing Sanitizer in AirLock

    I've been told StarSan stays for up to 6months, after that you would need to make a new batch of it. If I have a 3 piece airlock with StarSan in it and I am conditioning it for more than 6 months, do I need to change the sanitizer at that time?
