thinking about tackling a white grape peach

As I wrote in the title... I'm trying to figure out any improvement upon Jack Keller's white grape peach wine from concentrate. He calls for 2 cans per gallon and 1 1/4 #s sugar. If I wanted to change it up to 3 cans of concentrate, how do I calculate the sugar needed to bring up to the desired...

    high tannin in blackberry wine

Hey all, It's been a long while since I've been here. So I started a blackberry wine in March. 4# blackberries/gal. Narbonne yeast, 3# sugar/gal. Og was 1.115 when I started. Turns out I left the fruit on too long I believe. Anyway, there's a high tannin flavor (I.e. bitterness) in my wine...

    covering off flavors

So I started a traditional back in january. It got stuck, then I added calc carb, repitched, and it completed. Now there is a very bitter taste to the mead. so much that I can't drink it and enjoy it at all. Is there a way to salvage this or just dump it? I was thinking turn this...

    Questions about my upcoming braggot

I intend to start a braggot either today or tomorrow. Here's my question, I Don't want to have to buy gallons of spring water just to make batches of mead, braggot, wine, what have you. I know, I know, but every penny pinched can go towards better equipment. How do all of these folks who make...

    fruit purees

Hey all, it's been a while since I've been on here. I was thinking, never a good thing, that I could try and use one of those vinter's harvest fruit purees for my next melomel. Does anyone have any experience with these? If so how much should I use compared to "regular" or homemade fruit...

    Joe's quick grape question

Hey all, It's been a long while since I've been on here and wanted to do another batch. I wanted to do Joe's quick grape mead in a two gallon batch. Should I just double ingredients or, what would happen if I used only juice and honey with no water? Has anyone recently had this, does it age...

    Baffled about a calculation issue

So, I made this strawberry mead a couple weeks ago. It had 4.5 lbs honey and one full gallon of water with 5lbs of strawberries. OG was 1.115 without the berries but when I removed the strawberries, the bags of mush removed left the volume at just a couple of cups shy of two gallons. According...

    Unstuck ferment?

So I had a traditional mead that apparently stuck. I figured out that it was due to ph being too low. I tossed in a small amount of calc carb and gave a shake. Here is it now a few days later. Did it start back up? I've never had a mead kraussen like this before if it did. I'm also...

Mead kits... are they worth it?

I found some 'quick mead kits' from Ambrosia Farms here: http://www.beefolks.com/shopdisplayproducts.asp?id=87&cat=Mead+Kits And also curt and Kathy's mead kits here: http://www.northernbrewer.com/shop/cider-mead-sake/mead-making/mead-kits My question is, how good are these meads...

    Consistent ph problems

I seem to be having a bit of an issue with pH. My stuck ferment from https://www.homebrewtalk.com/f30/abv-question-311521/ seemed to be because the pH was down in the 2's. Now I have my Strawberry melomel going and it stopped on day threeish and once again the culprit was low pH! Am I...

    blackberry preserve use

I was thinking. Dangerous I know. However, I have a blackberry melomel that has cleared. I sampled it and it tastes extremely weak of blackberries. My wife hates it. I was thinking it might be better to add some blackberries and impart more flavor. Somewhere I read someone had used blackberry...

    JAOM bitterness

I tried my first batch of JAOM and it was thrown together on 12-7 of last year. It tastes pretty good mostly. However, it is a bit bitter. is there anything I can do to get that bitterness to back off? Or is it stuck like that? What should I do in the future batches? I was getting ready to...

    JAOM with Buckwheat honey

So, I found a source of Buckwheat honey on ebay for 50 lbs/ $100. Sounds good. however, I was wondering if it would be at all good for a light(er) brew such as JAOM or a raspberry mead. I have heard of the strong flavors and aromatics of the buckwheat honey, which is why I was...

    blackberry melomel question

So, I just racked my blackberry melomel to get it off the fruit. I tasted it (of course) but it had a bit of a bitter taste to it. I had been adding some honey to it a couple of ounces at a time the last couple of weeks. It was a 1 gallon batch and quite a bit of blackberries. Any...

    Temperature throws off sg readings?

I read somewhere that a higher temp of the must will affect your sg readings. I can't seem to find it now. Anyone have those numbers? I'm putting together 7 lbs with 1.5 gallons water and getting an og of 1.131 at 95 degrees. Is this right? the FAQ says my OG should be 1.118. Any thoughts?
