That's a Hoff-Stevens tap. I haven't seen that type used in quite a while, but I guarantee you'll need it within a month of getting rid of it. You should hang on to it.

According to my test strips, it's right around 4, just a tad under. Definitely far closer to 4 than 3.

Most of my meads are prickly hot right at the end of fermentation. Once it falls clear, just gently rack it off to another carboy, top it off with some sterile water and let it sit for a few months. When you come back to it you'll wonder why you were ever concerned.
