Hey guys, it's been a few years since I've been on the site thanks to "real life" but I'm back!
I've been waiting to upgrade my rig to 15g kettles and a B10 type build. Basically the brew stand is keeping me from getting there at the moment and I'm starting to think about just getting the...
Today's selections. I pitched onto the yeast cake from the IPA I just kegged during the mash, so no yeast packet.
The boil
My buddy Mike aerating and moving trub. Note the hat people, I'm trying.
Starting to refill the ferm room.
Sparging with a hombrew. My Chaina Cat Sunflower, Brown Ale spiced with Chai.
Not a bad conversion.
This is the Chai, flash must have done something, it's actually not at all that dark. It's a bit darker than iced tea.

I first had "Oat" at a bar in Syracuse NY. I was completely blown away by this beer. For the longest time my friends just kept telling me to shut up about it... then they tried it. Fantastic stuff. Pretty much everything that comes out of there is top knotch. Their IPA is delicious.
I love the Dead and have always loved their version of Deep Ellum Blues, so I decided to make a pun of it, Deep Ellum Brews. All the beers are song titles, I try to find some sort of relevance in them...
Morning Dew - IPA
Lady With A Fan - Cinnamon Coffee Smoked Porter
Jack Straw - Rye Pale...
I would think the recipe is saying to dry hop for 5-7days not 5-7 days into fermentation. That said, I agree with Beerthoven, 2 weeks primary then rack into secondary. 2 weeks is usually a minimum also, sometimes it's longer for me.
