    Umm...it's a stout. came in a box from the beer wine and cheese store near my house--do you need to know the whole recipe? I don't have it here with me.

    Ahhh. Yes. I used the cheap sanitizer that came with the kit. The guy at the home brewery place told me not to do that but I'm kinda broke. I tried to rinse well, but I plan to go with the no-rinse sanitizer next time.

    I was drinking my first home brew beer over the weekend, and I've realized, there's no head! It seems to be carbonated but...no head. Is head related to carbonation? What's the problem? Thanks!

    Nice!! Thanks for the advise. Obviously the yeasts in the wort are a bit more vigorous than the yeasts in my sourdough starter:)

    Doesn't the airlock let enough gas escape to prevent the lid from blowing off? And when the lid blows off is it a mess? The lid blows off my sourdough starter all the time but the only evidence is a popping noise from the tupperware, and then the lid is loose:)

    Does it ever happen that the wort blows off the lid of the fermenting bucket and makes a mess? When and why? And, if the bottles of beer were going to explode, when might that happen? Within days of bottling?

    How bad will my house smell?

    I have only done it once and I too was worried about the smell cause my family is not so tolerant of smells. My partner felt the smell was "ok" and "not too strong". I was so worried about it i was thinking about doing my first boil while they were out of the house. The smell went away quickly...

    Oh, my hose is long enough! I don't know why I put the hose at the top of the carboy at first. I just...wasn't thinking. I have a lot to learn:)

    For commercial beers, I've never noticed the hoppy flavor going away after any specific period of time. But maybe I've never had a bottle of beer last so long in my fridge that I would know. I hate to see beer sit in the fridge for any longer than a week:)

    If the hop flavors don't save, then how do the commercial brewers do it? What do they do to the beer to retain the hoppy flavor--scary preservatives or something?
