Recipe Review - Oktoberfest with Koelsch Yale yeast

Greetings - I am planning on brewing an Oktoberfest ALE using Kolsch yeast since I can't ferment at lager temps in the summer. My thinking is that the Kolsch gives a good clean crisp result, so it should work okay for the purpose. My planned recipe is below, any thoughts on the concept or...

A bit sweeter ... higher temp?

Greetings! I made a Hefeweizen this spring that I just tapped. Although I like it, I don't like it as much as last spring's batch, which had just a hint of sweetness to it. My recipe was the same for each. 5 lbs German Pils and German Wheat, .8 oz Hallertau for 60 min, and White Labs...

Screw the numbers, it's time to brew!

Paralysis by analysis . . . I have spent too much time second guessing my recipe and process, it is time to go forth and brew, numbers be damned! Seriously, beer styles (German Pills or Bohemian?) Water (Pilsen is way different from anything in Germany according to the numbers), Hops, not...

Keep Me On The Right Track - German Pils

Hi all - It is cold here in Michigan right now, and my basement will be at the perfect temp for a lager for about the next 2 months, time to try something new. Please take a look at my German Pils and let me know what you think. I plan to brew this tomorrow night if all goes according to...

90 or 60 min boil and why???

I read a comment on another thread that Pilsen malt should be boiled for 90 min instead of 60. As I just did a brew using Pilsen that I boiled for 60 min I am wondering why boil Pilsen longer than other malts I have used? It is still fermenting so I can't speak to the results yet. Are...

OK to store carbed beer in kegs at room temp?

What do you do when you have more beers kegged than cold storage space? I would like to brew a couple batches for a spring party, but my fridge will only hold three cornies. Is it okay to cold crash, force carb, then store in the basement for a few weeks until it is needed?

    Help with ESB please

Greetings! I have been using the all grain process for about a year now, and homebrewing using DME's for a few years. I added a keg system for my brews about 6 months ago, and although I have had some really stellar results with the keg and the AG process, I just tapped an ESB that has me...

    My first Kolsch is GREAT!!!!!

Sorry, I had to brag just a bit. This is my second all grain, and my second kegged beer and I have to say it is wonderful!!!! I used a recipe posted in an article on beersmith, added a bit to the grain bill since I am doing an infusion mash with a single batch sparge, and it worked out very...
