    My Westmalle tripel clone

Ive followed the all grain recipe for westmalle from BYO online. The recipe uses belgian trappist yeast and calls for 3 weeks of secondary at 50 degrees. The question is why. Is there a special component to the beer that it needs to sit in the cold for so long other than clearing out? It looks...

    subbing 2 row for extract?

Im making a westmalle tripel. It also calls for 4lbs extra light. I forgot to get the extra light but have plenty of 2 row. Is the grain going to affect the flavour significantly? Im thinking 6-7 lbs 2 row for this.

Anyone else use buckets like these? I have a 6.5 gallon true brew bucket thats fermenting but is letting out air through the sides of the lid and not bubbling through the top. Its really annoying. Anyone have this same problem or a fix. Also, can this cause problems down the road?

Beer started fermenting again the day before bottling....

So I was going to bottle my first ipa later today but I came home and the beer is fermenting again with a small layer of foam over my dry hops. Its gone from 63 to 73 degrees in my basement in the past few days due to the weather. I dont think its contaminated since I dry hopped 2 weeks ago...
