very little carbonation after 2 months

It's been bottled for over 2 months now, and there's still very little carbonation (no head). When I bottled, I boiled 5 oz sugar for ~10-15 min and then added it to the bottling bucket, then bottled. I let it sit in my basement for a month, but it wasn't carbonated, so I moved it to a warmer...

    bottling buckets both leak

Ok now I know it must be something that I'm doing wrong. When I put together my bottling bucket, it leaks out the underside of the spigot (right under where the bucket hole is). I have tried using various levels of tightness, and nothing works...it just keeps dripping, which causes a mess. I...

using christmas lights at bottle conditioning

Due to energy saving at my house, the temp goes down to around 64-65 during the day, and then up to about 70-72 at night, so I think I have a problem with my bottles not being at a very good temp for conditioning (I've been waiting over a month, and it's not carbonated yet). What if I put some...

    didn't top off wort enough

So I was topping off the wort for an IPA before pitching, and the foam came up so much that I couldn't really tell how full the bucket was, so I stopped where it looked like 5 gallons. Then a few weeks later I realize that the wort was only filled to ~4-4.5 gallons! How will this affect the...

    Nottingham yeast

I heard there was a recall for Nottingham yeast...but Midwest and Northern Brewer still sell it on their website. Should I be worried about buying it?

using Mr. Malty calculator for a barleywine

So, Mr. Malty says, for a starter for a 1.120 OG beer, to use 2 vials of yeast with 2.24 liters of water, or 1 vial of yeast with 5.55 liters (!) of water. This seems like a lot. I don't have anywhere to make a 5.55 liter starter and I didn't think I'd have to buy two vials, but I know getting...

    using coke zero to backsweeten

:ban: OK, I'm not actually planning on doing this. But I'm curious if anyone has any idea whether this would work.

how long does dry yeast last?

So I got a Midwest recipe kit in the mail. I took the yeast out and stuck it in the refrigerator. Then, a week later, I found that they had put another yeast packet in the kit (apparently by mistake)...it was a Safale US-04 packet. I quickly put the yeast in the fridge, but can yeast survive...

    clarity of the cider

The apple juice I bought was from whole foods and it was the opaque pulpy kind. Will the finished cider be only as clear as the original apple juice? (in my case, not clear at all)

is 5 oz corn sugar a "standard" amount for priming 5 gallons?

I noticed that all of midwest supply's kits contain 5 oz of priming sugar, and the packages of sugar you can buy from them and northern brewer is 5 oz. The instructions always say to boil a cup of water and all 5 oz of the sugar and to add it for priming. So my question is: is 5 oz about...

    argh...my spigot has a leak!

Bottling was a mess...mostly because my spigot had a leak at the bottom. Is there some way to fix this?????

how much apple juice for priming?

I have 4 gallons of apple juice fermenting right now. I'm going to prime with more apple juice, and I wanted to know how much to use. The label on the juice I'm using says it has 26 g sugar per 8 fl oz.

    first time bottling

Dear flying spaghetti monster that was messy my spigot had a leak in it, which caused all kinds of problems. I'll have to figure out how to fix that. anyone have this problem? i only ended up with 46 bottles...i was kind of expecting more like 54, so that's disappointing. i don't think...

    simple cider

So I was going to make some cider in a simple way, basically just 4 gallons of store-bought cider with no preservatives in a carboy with some brown sugar and ale yeast for 3 weeks. but i also wanted to add some apple pie spice to it. when should I add the spice? can i just add it to the carboy...

    OG reading not correct?

I got around 1.060 when taking the OG of my Double IPA, which should have been around 1.070-1.074. I used a midwest supplies kit. Could this just be me getting too much water in the sample?

    secondary question

So I had the beer in the primary for a week, took a gravity reading and it seemed to be at a FG level of 1.016 or so, so I transferred it to secondary. This was before I read here that transferring to secondary is kind of pointless. So now it's been a week since transferring to secondary...

imperial stout - secondary for 6+ months or bottle it?

so i'm planning on putting it in the primary for a month. the instructions say i should transfer to secondary for 6+ months, but couldn't I just bottle after primary and keep it in the bottles for that amount of time? would it make any difference?
