    Belgian Triple stuck ferment?

    belgian triple candi sugar

    im doing my first belgian triple and need to add candi sugar. my LHBS said to just add it at the beginning of my 60min boil with all my extract. I have been reading that adding it last 5-15 min is the way to go. Also i have LME and DME should i add both at beginning of boil or half later...

    STC 1000 temp probe

    on the temp probe/sensor there use to be two solid wires that you would plug into the back of the stc. i cut those wires off on accident. When i stripped back the wire to expose new wire it was stranded not solid like i cut off? is this going to effect the way the probe reads/works?

    full boil and extra hops

    I know that full boils are better so since i only have a 5gal pot could i just add water as it evaporates to keep it as close to 5 gal as possible or am i just better off adding the few gals to my fermentor.     i have 600psi remaining in my tank and dont have the money yet for a refill. Will this last me through a keg? I plan on force carbing it, just want to make sure i have enough so i dont have to switch in the middle?

    keezer questions

    i have been looking into building a keezer but there are a few things im not sure on. In some of the pictures there seems to be a cup of water in the freezer? And there are also some with little computer like fans. What are the purpose of both of these.

    how do i tell my target gravity

    Ways to keep fermenting Cool/warm

    Ive been looking into getting a freezer or refrig. I have a hard time keeping a warmer temp and have no safe way of keeping a cool temp. Could i use the freezer to do both. What is the best way to setup my freezer. I know there are different types if controlls that i could install.
