    Head on beer question

    Low gravity ale sitting on yeast cake ?

    I started a low gravity ale 1.036 on 10/3 then had to have appendix removed on 10/8 and wont be able to get back to it for a few days . It has been staying 60-65 in the back room where it is and am hoping it wont get any off flavors until I can deal with it . Probably be a couple more weeks...

    A dark stout question

    I had a dark stout recipe and cut it in half and am coming out with a 1.078 SG , right at ABV 10% @ 80 deg. I have 2.5 gal of wort , can I just ad 1/2 gal of water to drop the gravity with no harm ? At same time it would cool for pitching yeast . Thanks !
