I found a recipe I want to try, but the % is a little low, about 3%. I'd like it to be at least 5%. I know that basically more malt/sugar=more alcohol % but I don't want to just wing it because I know there are other factors that might screw up the taste. So any suggestions to alter this...

Sorry, if this is the wrong board, but I figured Mead enthusiasts would make for better discussion than the general board. I found a great place 20 minutes away that sells all sorts of imported beers, wines, mead, and ciders. It's a home brewers dream for research! But it got me thinking...

My (liquid)yeast takes 3 hours to incubate and swell, Can I do my boil and the whole process, cover with the lid in bucket and add it later when its done? I'm just not sure if its ok to let it sit without yeast. This is only my second batch, so bare with me :confused:
