... if I was after 40 pints of cooking beer that is.

Had a lil taste to see how it was going, and it tastes like very good vinegar.
It spent 3 weeks in the fermenting bin so far, and I was expecting something more like a week to 10 days so could that be why?
Any input would be gratefully received!
