I started 4.5 gallons of pasteurized Empire cider on monday. I pithched the Wyeast product for that purpose. It looked fine yesterday and started to bubble last night.

It was really bubbling away this morning, and when I got back from some errands, it was foaming through the airlock. Also, some doofus had turned the room thermostat to eighty!

I put it in the much cooler laundry room for now and plan to put a freshly sanitized airlock when it settles down.

This is my first batch of cider, BTW. What else should I do?
 
I got some Ferm cap (an anti foamer) from my homebrew shop, and added 5 drops when I cleaned up and changed airlocks. By then, it had cooled to 67 but was still bubbling rather vigorously. Five drops is half the recommended amount, but it took the foam down quickly.

That room should go down to 50 tonight. I'll let you know how it's doing tomorrow.
 
Consistant temperature is important. I would try to keep it in the range that the instructions say. 18-24C aiming for 20C if memory serves.

The room is 15C, and it's bubbling away nicely at 16.5C. The rest of the house is too warm, so I'll just leave it there.
