Have batch 2 running now. Batch one was an expeiment all around but wet hog in for batch 2.
Started B2 as 5Gal of fresh press from a local farm, UV Sterilized.
12/17 Starting S.G. : 1.057
12/27 Racked at S.G. : .999

Used White Labs English Cider Yeast.

18 days after first rack still cloudy.

As I am still experimenting I am thinking of breaking this batch up into smaller 1 gal batches then bottling from there after further aging.

I would like to clear up the cider so I am thinking about treating it with Bentonite. When should this be done?

My 5 "experiments"
1. Add Oak strips (cut up a barrel and toast them myself (used barrels are cheap around here)
2. Add potassium Sorbate and bentonite, rack again and add 1/2 of a vanilla bean and 1 cup Honey (we will see exact amount) for flavor?
3. Cinnamon Chips, Orange Rind, Whole Allspice, Whole Clove
4. Dont know yet, suggestion?
5. Do nothing

Am I on the right track or heading towards ruined cider?

Ahhh also should I flush my carboys and/or bottles with CO2/Argon/Nitrogen before I rack?

Your experiments sound good. Your cider is only 4 weeks old. Just be patient. It should clarify on it's own while you do your experiments. Cider does not clarify as quickly as beer does.
